Ingredients:
- 2 tablespoons crushed fennel seeds
- 1 tablespoon ground black pepper
- 1 2.5-3 pound boneless pork loin
Instructions:
Preheat the oven to 400 degrees F.
Add black pepper to mortar and grind coarsely. Add fennel seeds and continue to grind until crushed and mixed.
Rub pork with the pepper/fennel. Add salt if desired. Let pork come to room temperature and add (fat side up) to a roasting pan or rimmed baking sheet.
Roast until pork has an internal temp of 155 degrees F, 45-55 minutes. Remove from oven, tent with foil, and let rest for 10 minutes before slicing and serving.
Notes:
- Add asparagus or brussels sprouts (or any other veggie) to the pan 15 minutes before the pork was finishing. Served with a baked Japanese sweet potato.
