Based on a sloppy joe recipe with Japanese sweet potatoes added. Works surprisingly well as a quesadilla filling. Can eat as a chili or use in a sandwich, grain bowl, or tacos.
Ingredients:
- 1lb ground beef
- 1lb ground turkey
- 1 yellow onion
- 1 can tomato sauce
- 4 tsp grated garlic
- 2 tsp pepper
- 1 can red kidney beans
- 1 can black beans
- 3 diced sweet potatoes, roasted
- 3-4 tsp Worcestershire sauce
- 2 tbs ketchup
- 2 tbs dijon mustard
Instructions:
Brown the beat with onions, garlic, and pepper. Add tomato sauce, Worcestershire, ketchup and mustard to pan and mix. Layer sweet potatoes, beans, and the beef/turkey mix in the slow cooker. Cook on high for 3 hours. Add cheese to melt into the mix if desired.
